“Gotta Have It”

Shrimp and Fennel

1 tablespoon olive, coconut OR MCT oil

2 1/2 cups fennel, cut into ¼” slices

1/2 medium onion, peeled, cut in half (from top to bottom) & sliced into ¼” slices

1 tablespoon “Gotta Have It“™ Seasoning

3 cloves garlic, minced (optional)

1 teaspoon crushed red pepper (optional)

8 to 10 ounces medium shrimp, uncooked, peeled and deveined


1) Put oil OR water in nonstick pan over large heat.  Add fennel, onion, and “Gotta Have It“™ Seasoning and garlic. Cook for 1 minute.

2) Add red pepper and shrimp. Continue cooking another 4 to 5 minutes until shrimp is pink and fennel is tender…not mushy.

Sassy Citrus™ Mahi Mahi
4 four oz Mahi Mahi fillets
4 tablespoons “Sassy Citrus Pepper” ™
2 tablespoons oil (coconut oil is best)

Put oil in non-stick pan. Add fish fillets and turn to coat with oil.
For each fillet, sprinkle with 1 rounded tablespoon of “Sassy
Citrus Pepper™” on both sides; massaging into the fillet. Turn
heat on to medium. When fish begins to sizzle, cook for about
3 to 4 1/2 minutes. (this will depend a bit on the thickness of
the fillet) Turn fillet over, increase heat to between medium and
medium high, cooking for an additional 2 – 3 minutes or until
done. (You want it to sort of ‘blacken.’) Yum!

Garlic Salmon

1/4 cup oil or butter (or combination of the two)
2 tablespoons mustard
2-3 tablespoons Grandma Edna’s “I’m Outta Here”™ Garlic
Pork Rub

Spread over salmon fillets or steak and bake at 375 degrees or
15 to 20 minutes, or until done.

“Gotta Have It™” Super Supper
1 tablespoon Grandma Edna’s “Gotta Have It”™ Seasoning
8 oz firm white fish, cut into 1 inch chunks
1 medium/small onion peeled and cut into ½ inch strips
12 asparagus spears snapped into thirds
2 tablespoons cooking oil (coconut oil is best)

Heat oil in pan. Add fish & sprinkle with Grandma
Edna’s “Gotta Have It™” Seasoning. Sauté about 1 – 2 minutes
on medium to medium-high heat. Add asparagus & onion.
Sprinkle with a bit more seasoning & continue cooking, stirring,
until asparagus is tender crisp. SO GOOD!

“Special” Seafood Dip
Combine well:
3/4 cup mayo
3/4 cup sour cream
1 clove crushed garlic (optional)
1 tablespoon “Grandma Edna’s “Special” Seasoning
1 can drained clam or shrimp

Keep refrigerated.
