“I’m Outta Here”™ Garlic Pork Roast

3 1/2 to 4 lb pork butt roast

3 to 4 tablespoons “I’m Outta Here”™ Garlic Rub

With knife make about three 2 inch deep slices on the top of roast. Pour seasoning into all slices and also over the entire roast; rubbing in. Place roast in heavy roasting pan, or cover with heavy foil. Place in a 300 degree oven for 4 to 5 hours, or until roast pulls apart very easily. Pull apart in large chunks, allowing juices to cover.

Spicy Down Home Delite™ Pork Sausage

1 lb ground pork

3 – 4 tablespoons “Down Home Delite” ™ Seasoning

2 teaspoons ground cayenne pepper (or to taste)

2 teaspoons oil (coconut oil is best)

By hand, using gloves, mix ground pork with “Down Home Delite” ™ Seasoning and cayenne pepper; form into 8 patties. Heat oil in non-stick pan, add patties and cook on medium heat until done.

Easy Pork Verde

2-3 lbs boneless pork spareribs…on the lean side

2 tablespoons “Now…THAT’S Mexican™ Seasoning

12 oz jar mild salsa

15 oz can chopped tomatoes with juice

2 large Anaheim peppers, seeds removed and cut into pieces

1 medium onion, chopped

Shredded cheese

Sour cream

Chopped cilantro

2 teaspoons oil (coconut oil is best)

Put oil in Dutch oven kettle and heat to medium high. Cut pork into 1 ½ inch chunks and put in pan. Cook for 1 minute; stir. Add chopped onion and peppers; cook another minute or two until meat is seared on all sides. Add “Now…THAT’S Mexican™ Seasoning, salsa and tomatoes. Heat to simmering, reduce to very low heart and keep covered. Simmer for about 3 hours-until meat can be cut with a fork. You’ll have to stir it from time to time.

Spoon into bowl, top with cheese and a dollop of sour cream. Sprinkle with fresh chopped cilantro. Serve with tortilla chips or warm flour tortillas if desired.

BBQ Meatloaf Burgers

Mix:

1 lb. pork sausage

1 lb. ground beef

3 tablespoons “Down Home Delite” ™ Seasoning

¼ cup catsup

¼ cup fine chopped onion

Form patties and barbeque until done. Put a slice of cheese on each. Place buns in BBQ, (just make sure they are not over flame…warm with indirect heat.) Cover for 1 minute. Place patties on buns and serve with condiments of choice.
